So what exactly is a flødebolle?
Denmark's favourite sweet, and almost nobody outside Scandinavia has heard of it. A cloud of airy marshmallow on a base of biscuit, marzipan or chocolate — all of it wrapped in a thin shell of real Belgian chocolate, milk, dark or white. The shell cracks, the middle melts. That's the whole trick.
The marshmallow
